I made this Quinoa bowl the first time a few weeks ago and I love it so much that I have it almost every weekend now. Quinoa is protein packed and lower in calories than oats, so it is a low carb alternative for my oatmeal I normally have in the morning. It is also easier to digest and as I have some issues with my digestion it is ideal for me.
Here is the basic recipe:
- Rinse 1 Cup Quinoa (I used red Quinoa here, but you can use any you like)
- Add 2 Cups Rice Milk
- Cook Quinoa for about 15 minutes
- Add some spices like cinnamon, nutmeg or cacao
- Top with your favorites! I used berries, banana, poppy seeds and grated coconuts
