I made this Protein Banana Bread as a Healthy Treat for the second time and loved to have this life saver as a snack in the afternoon.

Healthy Protein Banana Bread

Ingredients for the Protein Banana Bread

  • 200g Cooked Sweet Potato
  • 150g Banana
  • 65g Pea Protein
  • 35g Rice Protein
  • 1 tsp Cinnamon
  • 2 tbsp Powdered Peanut Butter
  • 1 tsp Baking Powder
  • 85g Eggwhites
  • 40g Pecans

Instructions for the Protein Banana Bread

  • Preheat your oven to 180°C
  • Prepare your preferred baking dish with parchment paper
  • Smash the Sweet Potato and Banana in a bowl and mix in the Eggwhites (it should have the consistency of pulp, maybe you need to add a little water)
  • Mix the Pea Protein, Rice Protein, Cinnamon, Powdered PB and Baking Powder in another bowl
  • Add the “pulp” to the dry ingredients and mix them well together (best is to knead it with your hands)
  • Chop the Pecans in chunks and add them to the mixture
  • Add the dough into the baking dish and bake for about 30 minutes (check every now and then if it is still wet inside by stinging into the bread with a little, sharp knife or something similar. If the dough sticks to it, it’s not ready yet)
